Guizhou Food Map: From Street Snacks to Full Meals, How to Avoid the Pitfalls
Last week, we hosted a couple from Singapore. Their first words upon landing in Guiyang were: "We've read countless travel guides, but now we have no idea where to start eating."
This is a common concern. After 10 years of ground handling in Guizhou and leading hundreds of overseas Chinese tour groups, we've found that travelers' biggest challenge isn't "where to go," but "what to eat." With dozens of local snacks in Guiyang, it's hard for outsiders to tell which ones are worth the wait, which trendy spots are traps, and how locals actually eat—the real secrets aren't easy to figure out.
Here's a categorized summary of our experience—just follow it.
Breakfast: A bowl of noodles or rice vermicelli
For people in Guiyang, a morning means just two things: eating noodles or rice noodles.
Changwang NoodlesA signature breakfast of Guiyang. It features pig intestines, congealed duck blood, and crispy fried pork belly in a spicy red broth served with thin noodles—spicy, aromatic, and satisfying. We recommend "Lao Zhaopai Changwang Noodles" in Nanming District. A bowl costs around 12 yuan; expect the longest lines between 7 and 10. After 10, you usually won't have to wait.
Huaxi Beef Rice NoodlesIt's a different style. Made with beef bone broth, the soup is clear and bright, and the noodles are coarse, giving them a softer, chewier texture than changwang mian. A bowl costs 15 to 18 yuan; add meat and it still fills you up for just 30 yuan.
If you're staying in the city, just grab a bowl of noodles at any local eatery that's busy with residents.

Snacks: Siwawa and Tofu Balls
Arrived in Guiyang,Silkworm DollA must-try. A palm-sized thin pancilla wrapped with 10+ toppings like shredded radish, fish mint, and kelp, dipped in a spicy-sour sauce. Each plate costs 18 to 25 yuan and serves 6 to 8 people.
Tofu ballsIt's another street vendor. The fried tofu puffs are crispy outside and tender inside, dipped in fishy root chili sauce. They cost 3 to 5 yuan each and are available at roadside stalls.
MeituShuo ReminderFirst time trying Guizhou snacks? Fish mint (Zhe'ergen) has a strong flavor. If you're not used to it, just tell the vendor "no fish mint"—most stalls can skip it for you.

Main Course: Sour Soup Fish and Spicy Chicken
Kaili Sour Soup FishA signature dish of Guizhou. Fermented sour soup made from tomatoes and rice water, cooked with catfish or yellow catfish for a spicy, tangy, and savory flavor. Authentic versions use locally brewed sour soup base, not supermarket kits. In Guiyang, the average price per person is 80 to 120 yuan. We often take guests to "Lianghuanshai," a historic restaurant in Kaili with branches in Guiyang.
Spicy Diced ChickenIt's another hearty specialty. In Guizhou, sticky rice cakes are stir-fried with chili peppers and chicken, infusing the meat with fiery, bone-deep spice. A serving costs between 68 and 98.
If you're heading to Xijiang Thousand Households Miao Village, be sure to experience...Miao Long Table BanquetLong tables are laden with sour soup fish, cured meat, sticky rice, and rice wine while guests listen to Miao toast songs. Prices range from 100 to 150 per person; advance reservations required.
MeituShuo ReminderThe Long Table Banquet includes a toasting ceremony. If you can't drink much, say upfront that you'll only have rice wine. The Miao's homemade rice wine is around 10% ABV and tastes like sweet fermented rice—no problem.

Lessons learned
Avoid dining at major tourist attractions."Signature dish" restaurants near Huangguoshu and Libo Xiaoqikong are overpriced (double the cost) and serve poor-quality food. For main meals, return to the city or county town.
Check prices before ordering at the night market. Most stalls at Qingyun Market and Erqi Road Snack Street offer fair prices, but some vendors list prices in very small text in the corner. Always confirm the price before ordering.
Tell the chef your preferred spice level.Guizhou cuisine is typically spicy, but chefs are willing to adjust it to "mild." While the soup base for sour fish contains chili peppers and cannot be removed, its flavor is a gentle sour-spicy profile that even those who don't tolerate strong heat can enjoy.
How to pace it
If you're in Guizhou for 5 days or more, plan to spend 2 to 3 days just eating. Allocate 2 days in Guiyang (breakfast noodles, night markets, and sour soup fish) and 1 days in Kaili (birthplace of sour soup fish and long-table banquets). It's the perfect pace.
Avoid These PitfallsInfluencer-favorite spots often have lines of 1–2 hours and mediocre experiences. Locals prefer unassuming old establishments—just look for cars with local license plates parked outside.
Private car service: Guiyang to Kaili via expressway takes 2.5 hours. A 5-seater sedan costs 800–1200 per day, including pickup, drop-off, and waiting time. We operate our own fleet and can also arrange local ground handling in Kaili.
